Chilly Cranberry Soup


Serves: 7

Ingredients

4 cups fresh cranberries
3 cups water
1 1/2 cups sugar
1/2 teaspoon pumpkin pie spice
1 tablespoon thin orange peel
2 tablespoons lemon juice

Directions:

Combine cranberries, water, sugar, and seasoning in 3- quart saucepan. Bring to a boil; reduce heat. Simmer, uncovered, about 5 minutes or till half the cranberries are popped. Stir in orange peel and lemon juice. Cool. Chill before serving. Ladle soup into bowls. Garnish with mint leaves, if desired.

Editor’s Extra:
Good to heat some and serve as a gravy over turkey, chicken, duck, or venison.
