Ingredients

2 tablespoons olive oil
2 tablespoons butter
1 onion, finely chopped
1/2 pound cooked ham, cut into bite-size cubes
Optional:
1/4 pound bacon, chopped
1 (16-ounce) package spaghetti, cooked
salt and pepper to taste
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/2 teaspoon dried parsley
2 eggs, beaten
Optional:
ketchup

Directions:

Heat oil and butter in a large skillet. Sauté onion until transparent; add ham and bacon, if using. Cook until meat is done; quickly stir in seasonings. Transfer ham mixture to a separate dish. Add cooked spaghetti to skillet; top with ham mixture. Fry until spaghetti turns golden on bottom. Stir from bottom, mixing everything together; fry until heated through. Just before serving, pour in eggs; stir over low heat to mix and cook eggs, 3 to 5 minutes. Serve with catsup, if desired.
