Spinach Madeline

Ingredients

2 (10-ounce) packages frozen chopped spinach
4 tablespoons butter
2 tablespoons flour
2 tablespoons chopped onions
1/2 cup evaporated milk
1/2 cup spinach liquor
1/2 teaspoon black pepper
3/4 teaspoon celery salt
3/4 teaspoon garlic salt
1/2 teaspoon salt
1 (6-ounce) ball jalapeño cheese, or any pepper-hot cheese
1 teaspoon Worcestershire sauce
pinch of red pepper (optional)

Directions:

Cook spinach according to directions. Drain and reserve liquid. Melt butter and add flour, stirring well. Add onion and cook until soft, not brown. Add evaporated milk, liquor, seasonings, and cheese, and stir until cheese is melted. Fold in spinach. Cover top with buttered bread crumbs. Bake in moderate (350°) oven until bubbling.

This freezes well. If you do not freeze, make at least 24 hours ahead since it improves flavor.
