Country Chicken

Ingredients

2 sweet or hot sausage links, sliced
2 red potatoes, diced
6 tablespoons extra virgin olive oil, divided
2 boneless, skinless chicken breasts
2 tablespoons flour for coating
2 shallots, chopped
2 cloves garlic, pressed
3 ounces white wine
1 (7-ounce) jar roasted red peppers, drained
3 teaspoons sweet basil

Directions:

In a small skillet (or sauté pan) brown sausage and potatoes in 1 tablespoon olive oil, turning frequently to avoid burning. Remove potatoes and sausage from pan and allow to drain on paper towels. Heat remainder of olive oil in a large skillet. While oil is heating, slice each chicken breast lengthwise into 4 pieces; coat with flour. Sauté chicken in olive oil for 2 minutes. Add shallots and garlic and continue to sauté until chicken is lightly browned. Reduce heat. Add wine, sausage, potatoes, roasted red peppers, and basil, cooking for 5 minutes more.
