Chicken in a Package

Ingredients

1 large chicken breast, halved, skinned, boned
salt and pepper to taste
spicy mustard
2 small potatoes, thinly sliced
2 small onions, thinly sliced
2 carrots, cut into julienne strips
4 - 6 mushrooms, sliced
2 tablespoons butter
paprika

Directions:

Preheat oven to 350°. Sprinkle chicken with salt and pepper. Spread each breast half lightly with mustard; set aside.

On a large square of heavy-duty foil, alternate slices from one potato and one onion so that they overlap slightly. Repeat with remaining onion and potato on other square of foil. Sprinkle half of carrot strips over one, the rest over the other. Divide mushrooms between pieces of foil. Cut butter into bits and sprinkle over vegetables. Lay a chicken breast half on each pile of vegetables. Sprinkle both liberally with paprika.

Seal foil and lay packets on a cookie sheet. Bake 25–30 minutes, or until chicken is done and vegetables are tender. Serve at once.
