Irish Potato Cakes

Ingredients

4 cups leftover mashed potatoes
3 eggs
1/2 cup cream or unsweetened condensed milk
1 cup bread or cracker crumbs
2 to 3 tablespoons butter
salt and pepper

Directions:

Make patties using the mashed potatoes, and dip them in a batter made by beating the eggs and cream together. Since these are fairly fragile I handle them with a thin blade metal spatula. Sprinkle the bread crumbs on when you pull it out of the cream and egg mixture, and flip into a hot skillet and fry golden brown in melted butter. Season to taste. Sprinkle more bread crumbs on the upper side before turning. Serve with an omelet instead of hash browns.
