Breakfast Enchiladas

Ingredients

RED SAUCE:
red enchilada sauce
chili con carne without beans

ENCHILADAS:
corn tortilla, heated in hot oil, limp texture
chopped onion
grated cheese
fried egg, cooked separately

Directions:

Place heated corn tortilla on plate, spoon on red sauce, add chopped onions and grated cheese. Layer with another corn tort, red sauce, onions and cheese. Continue making same layers according to appetite. Add fried egg on top of last layer. Place stacked enchilada on plate with shredded lettuce and tomato wedges as garnish.
