Ingredients

4 left over baked potatoes, quartered and sliced 1/4-inch thick
1/4 cup onion, chopped
1/2 cup celery, chopped
2 green onions, chopped whites and greens
seasoned salt to taste
pepper to taste
buttered vegetable oil

Directions:

In a warmed 10-inch or larger Dutch oven, melt butter in vegetable oil. Add remaining ingredients and fry until browned and warmed through. Serve with bacon and eggs or an omelet. Serve with anything that sounds god for breakfast. Try them for dinner.
