Spinach, Chickpea, and Mushroom Salad

Ingredients

6 tablespoons olive oil or vegetable oil
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried or 2 Tbsp. fresh mint leaves
1 (8-ounce) can garbanzo beans, (garbonzo beans), drained
1/4 pound fresh mushrooms, sliced
1 (10-ounce) package fresh spinach, stems removed, leaves washed and patted dry

Directions:

1. Combine oil, lemon juice, salt, pepper and mint in bottom of salad bowl add chick peas, then top with mushroom slices and spinach.

2. Toss thoroughly so that all leaves are covered with the dressing.
