1. In a saucepan, bring chicken broth to boiling.  Stir in couscous. 
2. Remove from heat.  Cover.  Let stand for 5 minutes.
3. Add salad dressing.  Cover and chill.
4. To serve, toss couscous mixture with shredded spinach, tomatoes, and water chestnuts.
5. Serve on spinach leaves.
