Hellenic Village Salad

Ingredients

4 to 5 ripe tomatoes, sliced
1 clove garlic, cut
1 large cucumber, diced
2 medium green bell peppers, seeded and sliced
3 scallion or 1 round onion, sliced
16 Greek olives, rinsed
2 ounces feta cheese, broken into small chunks
1 tablespoon olive oil
2 tablespoons vinegar
Freshly ground pepper
dried oregano (for garnish)

Directions:

1. Place the tomatoes in a salad bowl that has been rubbed with the cut garlic.

2. Add the cucumber, peppers, onions, olives and feta.

3. Sprinkle the olive oil, vinegar, and pepper over the salad. Stir thoroughly. Top with oregano.

4. Serve cold.
