Corn Chowder*

Ingredients

1 large onion, sliced
2 tablespoons margarine
2 medium unpeeled potatoes, cubed
1/4 teaspoon salt (optional) and pepper
14 ounces skim evaporated milk, undiluted
1 (1-pound) can cream-style corn

Directions:

1. Satué onion in margarine.

2. Add potatoes, salt, pepper, and enough water to barely cover. Cook until potatoes are soft.

3. Add milk and corn. Rinse out milk can with 1/4 cup additional water and add to chowder. Stir. Heat but do not boil.
