Swiss Chocolate Mousse

Ingredients

2 cups whipped cream
1 tablespoon powdered sugar
1 teaspoon vanilla extract
1 (12-ounce) package semi-sweet mini chocolate chips
2 tablespoons cream de cacao or 2 teaspoons unsweetened chocolate extract
1 tablespoon water

Directions:

In a small mixer bowl at medium speed, beat cream, powdered sugar and vanilla until stiff refrigerate.

Set 2 tablespoons of the chips aside for garnish. Place remaining chips in a small saucepan add creme de cacao or chocolate extract and water. Stirring over low heat, cook until chips are melted and mixture is smooth.

Remove whipped cream from refrigerator. With mixer running at low speed, gradually beat chocolate mixture into whipped cream mixture, scraping sides as needed, until well blended. Spoon into six stemmed dessert dishes. Sprinkle with reserved chips. Serve immediately or refrigerate until ready to serve.
