Swedish Fruit Compote

Ingredients

1 (11-ounce) package mixed dried fruit
1/2 cup raisins
3/4 cinnamon stick
4 cups water
1 orange medium, unpeeled, halved and thinly sliced
1 (18-ounce) can pineapple juice (2 1/4 cups)
1/2 cup red currant jelly
1/4 cup sugar
2 tablespoons tapioca quick cooking
1/4 teaspoon salt

Directions:

In large saucepan, combine mixed fruits, raisins, cinnamon and water. Bring to boil, simmer uncovered until fruits are tender, about 30 minutes. Add remaining ingredients, bring to boil, cover and cook over low heat 15 minutes longer, stirring occasionally. Remove stick cinnamon and serve warm or chilled in individual dishes, depending on the weather and your mood.
