Minted Melon Slices


Serves: 8

Ingredients

2 cantaloupes ripe or other type melon
Sprinkle of salt
2 tablespoons fresh mint finely chopped fresh
Mint leaves for garnish

Directions:

Peel melon and cut into 1-inch slices. Layer in bowl, sprinkling each layer with slightest bit of salt and sprinkling of finely chopped mint. Let marinate for a couple of hours in the refrigerator prior to serving. Garnish with mint leaves.
