Jellied Diamonds With Mandarin Oranges

Ingredients

Jellied Diamonds:
1 tablespoon unflavored jello
6 tablespoons sugar
2 cups half and half
1 teaspoon almond extract
Sauce:
4 tablespoons sugar
1 tablespoon cornstarch
2 cups orange juice concentrate
1 tablespoon lemon juice fresh
1 tablespoon orange-flavored liqueur (optional)
1 (11-ounce) can mandarin orange segment drained

Directions:

For Jellied Diamonds, combine gelatin and sugar in saucepan. Stir in 1 cup half-and-half and over low heat, stir constantly until sugar and gelatin dissolve. Do not boil. Let cool, then stir in almond extract and the remaining cup of half-and-half. Pour into a 9-inch square pan and refrigerate until set.

For sauce, mix sugar and cornstarch add orange juice and blend. Over medium heat, stir until thickened. Remove from heat, add lemon juice and orange-flavored liqueur. Refrigerate until cold. Stir in mandarin oranges, keeping cold until ready to serve.

To serve, cut the gelatin into bite-size diamond shapes and place in glass serving bowl. Add the sauce and carefully mix so gelatin diamonds appear to float. Be sure to scoop up some of the orange sections when serving. Serve with Almond Cookies.
