Strawberries

Ingredients

fruit salads
chicken salad

Directions:

Whole plump, colorful fresh berries always look festive as a garnish. Strawberries can be sliced in half or made into a fan (see below) for a different look. If desired, leave stem and green hull on fruit. Rinse berries and dry well.

Other fruits which can be fanned for an attractive garnish are kiwifruit, peaches, pears and apples. A sprig of mint adds a nice finishing touch.

You will need a small sharp knife.

Select firm, red strawberries without any blemishes. Clean as needed. Place stem-side down on cutting board. Carefully cut several slices into berry without cutting all the way through (A). Lay berry on its side and gently twist slices, spreading like a fan. Remove hull and stem if desired (B). Place on paper towels. Cover and refrigerate until ready to use.
