Seafood Bisque

Serves: 6

   2 cups frozen fish filets, cooked
   1/2 cup shrimp cooked
   1/4 cup butter
   1/2 cup celery diced
   1/4 cup green onions, minced
   3 tablespoons flour
   2 cups milk
   1 cup light cream
   1 cup fish stock
   1 teaspoon salt
   4 drops hot pepper sauce
   1/8 teaspoon black pepper
   1 teaspoon savory salt
   2 tablespoons parsley minced


Shred fish (halibut, salmon, cod, or other) and shrimp with fork and set aside. Melt butter in saucepan. Add celery and onion; saute. Add flour and stir till blended. Gradually add milk, cream, and fish stock (or clam juice). Stir till slightly thickened. Add fish, salt, red pepper sauce, pepper, and savory salt. Simmer for a few minutes to blend flavors; do not boil. Garnish each serving with minced parsley.
