Peasant Soup

Serves: 8

   1 cup northern beans
   3 cups water
   1 teaspoon salt
   1 ham hocks
   3 carrots, peeled and diced
   1 onion chopped
   1 cup celery chopped
   2 cups cabbage chopped
   1/2 teaspoon garlic powder
   1/2 teaspoon black pepper
   1 teaspoon taco seasoning mix
   1/4 cup ham base
   4 cups water


Cover beans with water and soak overnight (or bring to boil for 2 minutes; remove from heat and let stand for 1 hour). Drain. Combine with 3 cups water, salt, and ham hock (or 1/2 pound salt pork or diced ham). Cover and simmer about 2 hours or till beans are tender. Add diced carrots, chopped onion, chopped celery, chopped cabbage, remaining seasonings, and 4 cups water. Simmer till vegetables are tender. Remove ham hock and cut meat off bone. Dice meat and return to soup.
