Ingredients

1 1/2 pounds boneless pork roast cut in 1/2 -inch cubes
1/2 cup onion chopped
1 1/2 teaspoons salt
4 cups water
2 (15-ounce) cans hominy white drained
1 (10-ounce) can mild chili salsa
3 tablespoons tomato paste
1 1/2 teaspoons oregano

Directions:

In a 3-quart saucepan, combine pork, onion, salt and water. Over medium-high heat, bring to a boil reduce heat to low, cover and simmer for 1 1/2 hours or until meat is fork tender.

Add hominy, chili salsa, tomato paste and oregano. Cover and simmer for 30 minutes or until thick and bubbly. Cool and refrigerate until fat solidifies on surface. Skim off fat and reheat to serve.
