Derby Day Burgoo

Ingredients

1 rabbit frying * (2 1/2 lb.)
1 pound beef stew meat
1 pound pork loin country-style rib
2 teaspoons salt
1/2 teaspoon black pepper
1/4 teaspoon red bell pepper ground
1 (17-ounce) can corn whole kernel
1 (16-ounce) can tomato wedges
2 cups potatoes cubed
1 cup green bell pepper chopped
1 cup carrot sliced
1 cup onion chopped
1 (10-ounce) package frozen whole okra
1 (10-ounce) package frozen lima beans

Directions:

In a 5-quart Dutch oven, place rabbit, beef and pork. Cover with water add salt, pepper and red pepper. Over medium heat, bring to a boil reduce heat to low, cover and simmer for 2 hours or until all meat is tender. Remove meat from broth. Cut meat from bones and cube set meat aside. Cool broth and skim fat from surface. Return meat to soup.

Add corn, tomatoes, potatoes, green pepper, carrots, onion, okra and lima beans. Over medium-high heat, bring to a boil reduce heat to low, cover and simmer for 1 to 2 hours or until vegetables are tender.

* A frying chicken can be substituted for the rabbit.
