Pork Chops Delight

Ingredients

vegetable oil
4 to 6 pork chops
Salt and freshly ground pepper to taste
2/3 cup green bell pepper chopped
2/3 cup onion chopped
2 (10 1/2-ounce) cans chicken and rice soup
2/3 cup long grain rice uncooked
1/2 cup hot water

Directions:

Heat oven to 350° F. Heat vegetable oil in skillet brown pork chops. Sprinkle lightly with salt and pepper. Remove chops to shallow baking dish placing 1 layer deep. In same skillet, lightly sauté green pepper and onion. Sprinkle very lightly with salt and pepper and place over pork chops. Mix together soup, uncooked rice, and water. Pour over and around pork chops. Cover tightly and bake for 1 1/2 hours.
