Peach-Pineapple Spread

Ingredients

1 envelope unflavored jello
1 (6-ounce) can pineapple juice unsweetened (3/4 cup)
1 tablespoon cornstarch
1 (16-ounce) can peach half in light syrup
1 (8-ounce) can crushed pineapple in its own juice
3 tablespoons sugar
1/2 teaspoon vanilla extract

Directions:

In a medium saucepan, sprinkle gelatin over juice let stand for 2 minutes. Stir in cornstarch until smooth.

Meanwhile, place undrained peaches and pineapple in a blender container. Cover and blend until puréed. Pour over gelatin mixture. Add sugar. Stirring over medium heat, bring to a boil and boil for 1 minute. Remove from heat. Stir in vanilla. Cool slightly before pouring into plastic containers or freezer jars. Cover and refrigerate up to 2 weeks or freeze up to 2 months.
