Garlic Cheese Spread

Ingredients

1 cup cottage cheese lowfat (2 %)
1/4 cup Parmesan cheese grated
1 tablespoon milk
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon dry mustard
1/8 teaspoon garlic instant minced
dash red bell pepper ground
2 ounces sharp cheddar cheese shredded ( 1/2 cup)
4 ounces neufchatel cheese softened

Directions:

Place cottage cheese, Parmesan cheese, milk, paprika, salt, dry mustard, garlic and red pepper in a blender container. Cover and blend at low speed, scraping sides, for 30 seconds or until uniform.

Add Cheddar cheese. Cover and blend, scraping sides, for 1 minute or until cheese curds are very fine. In a medium bowl, stir blended mixture into Neufchatel. Spoon into serving dish cover and chill at least 1 hour before serving to develop flavor.
