Orange-Glazed Pork Roast

Ingredients

5 pounds pork roast blade end or "rib end"
1 1/2 teaspoons ginger
1/4 cup orange juice concentrate thawed
1/4 cup honey

Directions:

Have meat dealer cut bones from roast, then tie them back on with string for roasting. (Bone adds flavor to roast while cooking.) Rub surface of roast with 1 teaspoon ginger. Place roast on rack in shallow roasting pan. Insert meat thermometer so bulb is in center of thickest part of roast. Roast, uncovered at 325 degrees F. for about 2 1/2 hours or until meat thermometer registers 170 degrees F. Meanwhile, combine orange juice concentrate, honey, and remaining 1/2 teaspoon ginger. Bring to boil boil 1 minute. Cool slightly. Brush sauce over roast several times during last 30 minutes of cooking. Remove roast from oven discard strings and bones. Allow to stand 15 minutes before slicing.
