Ingredients

4 lemons
2 teaspoons salt

Directions:

Slice lemons lengthwise into quarters, cutting to within 1/2 inch of the bottom so that the segments are not completely separated. Sprinkle cut surfaces with salt, then press into their original shapes. Place lemons in a canning jar, cover tightly, and let stand at room temperature for 2 weeks. Discard the juice that accumulated in the jar and separate the lemons into quarters.
