Melon-Berry Salad

Ingredients

1 1/2 cups cottage cheese lowfat
1/4 cup dates chopped or raisins
1/4 cup pecans coarsely chopped
1/2 teaspoon cinnamon ground
1/2 honeydew melon medium
lettuce leaves
3/4 cup mixed berries, such as blueberries, blackberries, and raspberries
Lime wedges (optional)

Directions:

In a medium bowl, stir together cottage cheese, dates, pecans, and cinnamon set aside.

Remove seeds from melon. Cut in half to form two wedges peel. Place melon on lettuce-lined individual plates. Mound cheese mixture over center of melon and spoon on berries. Garnish with lime wedges if desired.


Serve with whole wheat muffins and iced tea.
