Fruited Chicken Salad

Ingredients

1 cup mayonnaise
2 tablespoons orange juice concentrate
1 1/2 teaspoons curry powder
3/4 teaspoon onion salt
2 (6 1/2-ounce) cans chunk breast of chicken drained*
1 1/2 cups strawberries halved, or diced peaches
1 cup celery sliced
1 cup green seedless grape halved seedless
1/2 cup dates chopped or raisins
1/2 cup coconut flaked
lettuce leaves
1/4 cup cashew nuts coarsely chopped or dry roasted peanuts
Additional flaked coconut
Whole strawberries

Directions:

In a large bowl, stir mayonnaise, orange juice, curry powder, and onion salt until blended. Gently stir in chicken, halved strawberries, celery, grapes, dates, and 1/2 cup coconut until coated. Chill if desired.

Spoon chicken mixture onto lettuce leaves on individual plates. Sprinkle with nuts and additional coconut. Garnish with whole strawberries.

*Two cups cubed cooked chicken or turkey can be used.


Serve with small buttered rolls, lime sherbet, and chocolate chip cookies.
