Leftover Roast Beef Salad

Ingredients

3 cups roast beef rare, diced, cooked
1/2 cup celery chopped
1/4 cup onion finely chopped
1/4 cup dill pickle chopped Kosher
1/2 cup mayonnaise or more real
2 tablespoons cream style horseradish
2 tablespoons Dijon style mustard
Salt to taste
Crisp lettuce leaves
Chopped green onions
Thinly sliced radishes or cucumber

Directions:

Thoroughly combine beef, celery, onion, pickles, mayonnaise, horseradish, mustard, and salt chill. Serve on lettuce leaves garnished with green onions and radishes or cucumber. For a large crowd, make 2 or 3 times the recipe and serve in a shallow bowl.

Note: Leftover lamb or pork may be prepared in the same way.
