Thaw pie shell at room temperature for 20 minutes. Reshape and repair if needed. Spread mustard in bottom of pie shell.
Bake in a preheated 400° oven for 10 minutes. Cool on a wire rack.
Meanwhile, in a large skillet over medium heat, saute onion in butter or margarine for 3 minutes. Add broccoli and saute for 10 minutes or until tender and no moisture remains. Stir in poultry seasoning.
Spread half of the cheese in bottom of pie shell. Sprinkle broccoli mixture and chicken over cheese. Top with remaining 3/4 cup cheese.
In a small bowl, whisk half-and-half and cornstarch until smooth. Whisk in eggs, salt and pepper until well blended. Pour into pie shell.
Bake for 35 to 40 minutes or until golden brown and pie is set. Let stand for 10 minutes before serving.
