Apple-Raisin Muffins

Ingredients

1/2 cup milk
1 egg, beaten
2 tablespoons oil
1 apple, peeled, cored and finely chopped
2 tablespoons raisins
1 cup all-purpose flour
2 tablespoons sugar
1 1/4 teaspoons baking powder
1/2 teaspoon cinnamon
1/8 teaspoon salt
1 Optional: 1/4 cup chopped walnuts

Directions:

Combine milk, egg, oil, apple and raisins. Blend in flour, sugar, baking powder, cinnamon and salt; stir until just moistened. Stir in walnuts, if using; fill 3 to 4 paper-lined muffin cups 3/4 full. Bake at 400 degrees for 18 to 20 minutes, until a toothpick inserted in center tests clean.
