Cream of Tomato Soup

Ingredients

2 (10 3/4-ounce) cans tomato soup
4 cups chicken broth
1 (14 1/2-ounce) can diced tomato
1/2 cup brown or white long-cooking rice, uncooked
2 tablespoons olive oil
1 1/2 cups cooked chicken, chopped
2 tablespoons dried parsley
1 tablespoon dried basil
2 tablespoons butter
1/4 to 1/3 cup whipping cream or half-and-half

Directions:

Combine all ingredients except butter and cream or half-and-half in a medium stockpot. Simmer, stirring occasionally, over medium-low heat for about one hour and 15 minutes. Add butter; stir to melt. Blend in cream or half-and-half just before serving.
