2002 Salt Lake City Olympic Baked Beans

Ingredients

10 pounds ground beef
1 #10 can red kidney beans
1 #10 can pork and beans
1 #10 can crushed pineapple
3 green bell peppers chopped
3 red bell peppers chopped
3 medium onions chopped
2 cups barbecue sauce
1 1/2 cups Worcestershire sauce
1 cup liquid smoke
1 bottle (2 cups) backstrap molasses

Directions:

Brown the hamburger with the red and green peppers and onions in a 20” Dutch oven, then add the rest of the ingredients. Simmer for 15 minutes, stirring occasionally.

Colleen Sloan and I used this recipe for an event in which we catered during the 2002 Winter Olympic Games in Salt Lake City.

This recipe can easily be multiplied up to four times without change to flavors, adjust cooking times accordingly. Four times recipe barely fits in a Maca 22” Deep Dutch oven.
