Cashew Chicken

Ingredients

1 (6 1/2-ounce) package fried rice mix with seasoning packet
2 cups water
2 boneless skinless chicken breast halves cooked and cubed
1/2 cup sliced celery
1 (4-ounce) can water chestnut drained
2/3 cup cashew nuts

Directions:

Preheat oven to 350 degrees.

In a bowl, combine rice, seasoning packet, and water.

Layer chicken, rice mixture, celery, and water chestnuts in a greased 9 x 9-inch pan. Cover and bake 30–40 minutes, or until rice is done. Sprinkle with cashews. Makes 2–4 servings.
