Easy Strawberry Jam

Ingredients

2/3 pound fresh strawberries, hulled
3/4 cup white sugar
2 1/2 teaspoons lemon juice

Directions:

In a wide bowl, crush strawberries in batches until you have 4 cups of mashed berry. In a heavy bottomed saucepan, mix together the strawberries, sugar, and lemon juice.

Stir over low heat until the sugar is dissolved. Increase heat to high, and bring the mixture to a full rolling boil. Boil, stirring often, until the mixture reaches 220° F (105° C).

Ladle hot jam into sterilized, hot jars leaving 1/4 inch headspace. Wipe rim. Center warmed lid on jar. Apply band until fit is fingertip tight.

Process in a boiling water canner for 10 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.
