Rigatoni Caprese

Ingredients

1 pound rigatoni
3 tablespoons olive oil
1 large tomato coarsely chopped
2 to 3 cups fresh spinach
salt and pepper to taste
1/2 pound grated mozzarella cheese

Directions:

Preheat oven to 350 degrees.

Cook pasta according to package directions.

In a large, heavy skillet, heat the oil over medium-high heat. Add tomato and spinach and sauté until spinach wilts, about 3–5 minutes. When pasta is cooked, drain and add to skillet. Blend thoroughly with the tomato and spinach, about 30 seconds. Season to taste with salt and pepper. Place in a baking dish, sprinkle with mozzarella and bake until the cheese melts, about 10–12 minutes.
