Whole Wheat Buttermilk Rolls

Ingredients

1 1/2 cups buttermilk
1/4 cup shortening
2 tablespoons honey
2 cups whole wheat flour
1 1/4 cups bread flour
1/2 cup wheat germ
1 1/2 teaspoons salt
2 teaspoons bread machine or quick active dry yeast
3 tablespoons margarine or butter, melted

Directions:

Measure carefully, placing all ingredients except margarine in bread machine pan in the order recommended by the manufacturer.

Select Dough/Manual cycle. Do not use delay cycles.

Remove dough from pan, using lightly floured hands. Place dough in greased bowl, and turn greased side up. Cover and let rise in warm place about 30 minutes or until double. Brush with margarine.

Grease large cookie sheet. Punch down dough. Place dough on lightly floured surface. Divide dough into 24 equal pieces. Shape each piece into a ball. Place slightly apart on cookie sheet. Cover and let rise about 30 minutes or until double. Brush with margarine.

Heat oven to 350°. Bake 15 to 20 minutes or until golden brown. Serve warm, or cool on wire rack.

1 roll: 105 calories (35 calories from fat) 4g fat (1g saturated) 0mg cholesterol 170mg sodium 16g carbohydrate (2g dietary fiber) 3g protein.

Do-ahead Note
After you have shaped the dough into rolls and placed on the cookie sheet, cover it with plastic wrap. You can refrigerate it from 4-48 hours. Before baking, remove the dough from the refrigerator and remove the plastic wrap. Cover with kitchen towel and let rise in a warm place about 2 hours or until it is almost double. Then continue as the recipe tells you.

SUCCESS TIP
We found that letting the dough rise twice-once in the bowl, then again after shaping the rolls-gave these heavenly whole wheat rolls a lighter, tenderer texture.

Try This
For an added hint of honey, brush the got baked rolls with honey that has been heated. This also adds a nice glaze to the top of the rolls.
