Baked Fish (Peixe assado)

Ingredients

3 pounds fish steaks
salt and pepper
3 large tomatoes cut in half
1/4 pound sliced mushrooms
1/2 cup oil
1/2 cup white wine
2 tablespoons cilantro
1 grated yellow onion
lemon wedges

Directions:

Ask the fish merchant to slice the fish, but don’t separate slices so that fish looks whole.

Place the fish in a baking dish and season with salt and pepper. Surround fish with tomatoes and mushrooms.

Mix together oil and white wine. Pour over the fish and bake in a hot oven at 400 degrees for 30 minutes, basting occasionally.

Mix together cilantro and yellow onion.

Remove fish from the oven and sprinkle with cilantro and onion mixture.

Bake 10 minutes longer.

Garnish with lemon wedges.

Serve with buttery new potatoes with parsley.
