Wash zucchini and cut in half lengthwise. Scoop out shells and reserve pulp. Sauté garlic and onion in 3 tablespoons butter until onion is transparent. Remove garlic clove. Add zucchini pulp, tomatoes, and chiles to sautéed onion and mix well. Fill shells with mixture. Melt remaining butter and mix with bread crumbs, cheese, salt, pepper, and parsley. Heap each zucchini boat with bread crumb mixture. Cover and bake in buttered baking dish at 350° for 30 minutes.
