Spanish Rice

Ingredients

1 cup rice
2 tablespoons oil
1 onion, chopped
2 cloves garlic, minced
1 (16-ounce) can stewed tomatoes, chopped
1 (14-ounce) can beef broth
salt and pepper
1/2 teaspoon cumin powder

Directions:

Place rice, oil, onion, and garlic in skillet and brown. Add tomatoes, beef broth, salt and pepper, and cumin. Cover and simmer 20 minutes or until tender and juice is absorbed.


Fun Fact: Four Corners Monument is the only point in the United States where four states touch: Utah, Colorado, New Mexico, and Arizona (clockwise in photo).
