Simmer all ingredients except tortillas and cheese. Salt and pepper to taste. Heat oil; dip pieces of quartered tortilla in hot oil until softened. Layer tortillas, sauce, and cheese to top of a 9x13-inch casserole dish. Place in oven at 350° for 15–20 minutes to heat thoroughly and melt cheese. Cut through like a cobbler and serve with sour cream on top. A wonderful brunch dish! (Can be prepared ahead of time and refrigerated up to 2 days. Heat at 350° for 1 hour to serve.)
Fun Fact: The Lyndon B. Johnson Space Center (JSC) is the National Aeronautics and Space Administration's center for human spaceflight activities.
