Sauté onions, celery, and green pepper with garlic powder in margarine. Add 5 ounces mushrooms, basil, and thyme. Add chopped ham. Stuff chicken breasts with mixture (2–3 spoonfuls), roll, and place skin-up in baking dish (place so that pieces don't touch together).
Sprinkle with salt, pepper, and seasoning salt and bake at 425° for 1/2 hour. In a blender, blend stewed tomatoes, remaining 1 ounce mushrooms, and cooking sherry. Pour over chicken and bake at 350° for 1 hour.
