Grilled Swordfish with Chipotle Salsa

Ingredients

8 ounces swordfish steaks
CHIPOTLE SALSA
10 medium tomatillos diced
2 cups tomatoes peeled and diced (skins can be removed easily by plunging tomatoes into boiling water for 15 seconds and then running them under cold water)
1/2 cup onion fine dice
1 clove garlic minced or pressed
1/4 ounce chipotle pepper
1 teaspoon seasoned salt
1/2 cup cilantro chopped
1 teaspoon ground cumin

Directions:

1. Wash steaks and pat dry.
2. Marinate steaks in chipotle sauce (recipe follows) at least 1 hour and overnight, if possible.
3. Place on hot grill and cook approximately 5 to 6 minutes on each side.
4. Serve with additional chipotle sauce and Basmati Rice with Vegetables and Herbs.

CHIPOTLE SALSA
1. Add all ingredients except cilantro to 2-quart pot.
2. Simmer 20 minutes, until tomatillos and tomatoes are soft.
3. Cool , add cilantro, and reserve.
