Apple and Arugula Salad

Ingredients

4 cups arugula torn into bite sized pieces
2 cups red apples sliced with skin on
1/4 cup shredded daikon or jicama
3 tablespoons lemon juice
1/8 cup crumbled blue cheese
2 tablespoons organic walnut oil

Directions:

1. Place arugula on two salad plates.
2. Top with apples and daikon or jicama; sprinkle with lemon juice.
3. Sprinkle plates with bleu cheese.
4. Drizzle walnut oil over both salads.
