Southern Fried Chicken and Fritters

Ingredients

2 eggs
2 tablespoons milk
1 cup bread crumbs
1 1/2 pounds boneless, skinless chicken breasts, chopped
oil for deep frying

Directions:

Whisk eggs and milk together in a shallow bowl set aside. Place bread crumbs in a pie pan set aside. Soak chicken in egg mixture coat with bread crumbs. Cover the bottom of a 12" skillet with oil heat until hot. Add chicken cover and heat for 15 minutes. Uncover and flip chicken heat until juices run clear when chicken is pierced with a fork set aside and keep warm. Blend remaining egg mixture and bread crumbs together add additional milk or egg to make a thick paste. Drop by tablespoonfuls into same skillet and heat until golden on both sides, about 5 minutes drain. Serve chicken and fritters together.
