Unbelievable Minestrone Soup

Ingredients

2 (14-ounce) cans chicken stock
1 teaspoon Italian seasoning
1 large carrot (shredded)
1 large potato (in small cubes)
1 stalk celery (diced)
1/2 cup sliced onion
2 (14-ounce) cans tomatoes (diced)
1 tablespoon red wine vinegar
1 cup escarole , (finely chopped)
1/2 cup pasta shell
1/2 cup fresh parsley (small pieces)
Parmesan cheese
1 can kidney beans (drained)

Directions:

In a crock pot, combine carrots, celery, potatoes, broth, onion, vinegar and tomatoes. Let simmer on low for 4 to 5 hours. 20 minutes before serving add escarole, pasta shells, and canned beans. Top the soup off with grated parmesan cheese just before serving.
