Two-Way Crostini

Ingredients

1 loaf French bread, thinly sliced
1/3 cup olive oil
2 cloves garlic, minced

Tomato-Basil Topping:
7 roma tomatoes, chopped
10 fresh basil leaves, minced
1 clove garlic, minced
1/4 cup olive oil
1 salt and pepper to taste

Cannellini-Rosemary Topping:
4 cloves garlic, minced
1/2 cup olive oil
2 (19-ounce) cans cannellini beans, drained and rinsed
3/4 cup water
1 juice of 1/2 lemon
1 tablespoon fresh rosemary, chopped
1 salt and pepper to taste

Directions:

Place bread on a baking sheet. Microwave oil and garlic in a small bowl for 30 seconds; brush over bread. Bake at 425 degrees for 6 to 8 minutes, until golden.

Tomato-Basil Topping:
Mix ingredients well. Let stand at room temperature for 30 minutes.

Cannellini-Rosemary Topping:
Sauté garlic in oil. Add beans and water; bring to a boil. Reduce heat; simmer for 20 minutes. Mash beans until chunky; add juice and seasonings. Serve warm.
