How To Roast Garlic For This AMAZING Dip!


I believe I’ve shared before that my in-laws have a unique way of celebrating Easter. My mother-in-law loves all things small and childlike, and tea parties are one of her favorite things. Easter is usually a beautifully laid out buffet of finger foods and appetizers, all laid out on cheerful Peter Rabbit and cabbage dishes. The presentation is beautiful, and the food is always delicious!

You may not have an appetizer-based Easter dinner, but you DEFINITELY will want to try this dip- whether it’s for Easter, a family gathering, or a Friday night. I recently brought this to a family gathering and it was the first thing to go! And I had multiple requests for the recipes, so you know they really did like it ;).

This garlic dip starts with 4 heads of roasted garlic, so you know it’s gotta be good! I mean, we all know there’s no such thing as too much garlic. You then add tons of cheese and creamy goodness and the end result is just spectacular. A dip that allows you to pull up a foot of cheesy string when you dip your baguette into it is definitely a dip worth sharing!

If you’ve never roasted garlic, don’t be timid- it’s actually very easy! Simply chop off the top of your head of garlic- just enough so that the cloves inside are exposed. Peel off all the excess skin. It’s helpful to roll the head of garlic on the counter a couple times to help the skin remove itself, or simply rub it with your fingers a few times. Place the head of garlic on a square of aluminum foil, and drizzle with olive oil. Wrap the head of garlic completely and place on a pan. Bake in the oven at 400 degrees for about 50 minutes. You should be able to smell that heavenly garlic smell very strongly, and when you pull the garlic out and unwrap it, it should have a nice, golden brown color. Gently squeeze the cloves out of the skin and you’re left with some delicious roasted garlic cloves to use for whatever your heart desires!

For this recipe, once your garlic has cooled, you’ll want to mince it as best you can and then assemble your dip- which is super easy! You’ll be mixing sour cream, cream cheese and mayonnaise with a mixer, then tossing in your garlic, garlic salt, mozzarella cheese, parmesan cheese, and just a dash of parsley if you want. Then bake it for 20 minutes, serve with crackers or baguette slices and you’re on your way to heavenly garlic goodness!

This dip really is so simple to make, but it’s packed with flavor and cheesiness! This is definitely one you need to make. Just beware of the amazing garlic breath you will enjoy afterwards ;). The plus is that everyone will want some of this dip, so everyone can have garlic breath together!

Garlic Bread Cheese Dip

This Garlic Bread Cheese Dip has tons of creamy cheeses and roasted garlic - all the flavors of your favorite side dish in a delicious appetizer dip!

Ingredients:
4 heads garlic roasted
8 ounces cream cheese room temperature
1 cup sour cream
1/2 cup mayonnaise
1/2 teaspoon garlic salt
2 cups freshly shredded mozzarella cheese
1/2 cup freshly shredded Parmesan cheese
1/4 cup fresh minced parsley plus some for garnish (or 1-2 tablespoon dried)
Toasted bread crostini or cracker


Directions:
Preheat oven to 350 degrees. Grease a small baking dish with nonstick cooking spray.

In a medium sized bowl with an electric mixer, beat cream cheese, mayonnaise and sour cream until smooth. Stir in roasted garlic and garlic salt, then stir in cheeses and parsley.

Pour into a small baking dish.

Bake for 20-30 minutes, or edges are golden brown and cheeses are melted and bubbly.

Garnish with fresh minced parsley and serve with crackers or toasted bread for dipping.
