10 Ideas to Bring More Veggies to Your Breakfast

Since we should get several cups of vegetables in our diets every day, why not start getting some of those veggies in at breakfast time? Today I have 10 delicious breakfast ideas for you that you will look forward to that are full of delicious vegetables. 

SAVORY BREAKFAST IDEAS

I love savory breakfasts like bacon, eggs and hash browns. It is really easy to make a delicious savory breakfast with lots of veggies and the most obvious thing that veggies pair well with is eggs--so it’s no surprise that a lot of these ideas incorporate eggs. Here are a few of my favorite savory breakfast ideas:


1. Make mini frittatas that are perfect for a healthy breakfast on the go with spinach and sun-dried tomatoes.

2. Quiche. You can pack a bunch of asparagus, leeks, and roasted tomatoes into a quiche. 

Alternatively, you could go with something like finely chopped broccoli and cauliflower into a quiche topped with crumbled goat or feta cheese, fresh arugula and pistachios.

3. Top of a bowl of hearty greens tossed with vinaigrette with a poached egg and fresh Parmesan cheese.

4. Egg scrambles. Make a delicious egg breakfast scramble with sautéed peppers, mushrooms, asparagus and top with fresh diced heirloom tomatoes.

5. Make a sweet potato hash with wilted spinach and Brussels sprouts and top with a sunny side up egg.

You could even try a sweet potato hash with chopped sweet potatoes, beets, and onions. Then, make four welts in the hash and crack four eggs into the hash and cook until egg whites are set and yolks are still runny. 

6. Jazz up your favorite open faced avocado toast by loading it with finely chopped sweet onion, carrots, spinach, a bit of minced garlic and some white beans to mash onto it to create a true hearty vegan meal.


7.  Frittata. Add your favorite greens like spinach, rainbow shard, or even kale into an egg white frittata.

8. Make a breakfast pita stuffed with scrambled eggs, wilted or fresh spinach, and chopped tomatoes.

SWEET BREAKFAST IDEAS WITH VEGGIES.

There are plenty of ways you can incorporate veggies into sweet breakfast ideas as well. Here are two of my favorite ideas:


9. You can make carrot cake overnight oats with mixing your oats, milk of choice, cinnamon, a dash of ginger, and top with shredded half a carrot, and a handful of raisins and walnuts. You will have a delicious breakfast to look forward to. You can choose whether you pre-cook the carrots for a bit or leave them raw--the reviewers of this recipe mentioned loving both ways.

10. Smoothies. There are so many smoothie combinations that work beautifully together that incorporate different veggies. Another great thing about smoothies is that you can easily adapt them to your specific needs by using various dairy free milks like oat milk, nut milks, flax milk, hemp milk, or soy milk. 


Here are a few delicious smoothie combinations you might try:

  • Carrot and mango
  • Red detox smoothie with beets, carrots and celery
  • Parsley, kale and berries
  • Energy shake with freshly squeezed orange juice, banana, kale, kiwi and dates
  • Chocolate Peanut butter smoothie with spinach, peanut butter and a tablespoon of cocoa powder.
