The Perfect Dish For Those Crazy Weeknights


It’s definitely been a crazy week at our household! I have literally been on the couch all week- and no, I’m not watching TV! My 1 year old son has had a fever and hasn’t wanted to do anything except sit with me- which is definitely nice from the cuddle standpoint, but not so nice from the getting-anything-done standpoint. And a few days ago I came down with a pretty bad case of mastitis, which is NO JOKE if you’re unfamiliar with it. Fevers, chills, severe pain- this mama was down for a few days! I’m still recovering but luckily doing much better than before!

Needless to say, this week my homemaking has suffered more than just a little. Dinner has been less-than-ideal, to say the least. I’m not exactly sure because I was so out of it, but I’m 90% sure my kids had Cheerios for dinner 3 nights in a row. My husband has been swamped with work and putting in our yard and he did everything he could to help where he could- and cereal is his speciality ;).

The last couple nights I’ve actually felt well enough to get up and make something, but nothing that required me to be up for too long. One of my friends shared a recipe on Facebook that I thought was BRILLIANT! It’s lasagna made from ravioli! Lasagna is something my family loves, but I don’t always make because it’s a little time-intensive; but using layers of frozen ravioli with cheese and sauce? Genius. I can definitely stand long enough to make that ;). I just wish I had seen it earlier this week when I could have let my family take advantage of this oober easy yet tasty meal!

There are a couple recipes that are a little more time-intensive (only a little;) ), but if you really are desperate (as in you’re lying on the couch and can only bear to stand up for 5 minutes), then just open a can of pasta sauce and a bag of cheese and put a little on the bottom of a 9x13 pan, put a layer of ravioli, more pasta sauce and cheese and keep repeating until the pan is full. Top with cheese and bake until cooked through! (Each oven will be a little different, but you’re probably safe with 350-375 for 30-45 minutes or so).

If you’re not deathly sick but still want a fairly easy weeknight meal, you can take it up a few notches and still have it be an easy and delicious dinner! Here are 2 different recipes you can try! One is a red sauce version and one is a white sauce variety- because I’m not actually a fan of red sauce, but I’m a sucker for white ;).
